Tuscan Extra Virgin Olive Oil IGP

On this gentle hill at 450 meters above sea level, dominated above all by the varieties of Leccino, Moraiolo and Frantoio, L’Olio Santo Stefano is born.

What we like most is its intensely fruity, elegant and enveloping aroma, which is expressed in the mouth with fine aromatic notes, such as the aromas of broad beans and rocket and a delicate bitter hint of artichoke.The harvest is still done by hand during the November, and the olives are brought to the mill for pressing within 24 hours. The pressing with cold extraction and the incomplete ripening of the olives give this olive oil a distinct taste of fresh and slightly spicy grass and an intense bright green color with crystalline reflections tending to gold. Hand picking is still allowed today to local gatherers who carefully and respectfully take care of the olive grove granted to them throughout the year, from pruning, to harvesting, to obtaining their own oil.
The conservation in the company takes place in stainless steel tanks, only after a careful filtration process that allows us to keep all the nutritional properties intact, guaranteeing the balance between antioxidant defenses and the production of free radicals of this high quality extra virgin olive oil, for at least 2 years. Average annual production 500 HL (3,000 bottles in packages of various sizes)
