Sangiovese, King of Tuscany. Santo Stefano 2020 at the ONAV tasting

The first writing that mentions Sangiovese is “the cultivation of vines” by Solderini, a book of 1590, which indicates Sangiovese as a vine notable for its abundant productivity. It is in fact a vine with a large bunch, which can also produce a lot of grapes, giving rise to very light wines. At the same time, however, if it grows on soils that are poor and rich in skeleton, it will be less generous in quantity and this will allow us to produce with its fruits, fuller, alcoholic wines with never banal tannins.

The name is thought to come from Sangue di Giove or San Giovanni due to the rather early ripening period. There is a lot of religious syncretism in this assonance between Jupiter and Saint John, where then perhaps Jupiter can be replaced by Janus.

His birthplace has always been disputed between Romagna and Tuscany. We can see it as the main red vine of central Italy. In fact it is also widely cultivated in Umbria, Marche and Lazio. The resulting wines are many and therefore very different, for land, yields per hectare and vinifications. The most typical areas are Romagna and Tuscany, where the famous areas of Chianti Classico, Montalcino, Montepulciano and Maremma stand out. It is rarely vinified alone as in Brunello di Montalcino. More often it was and is blended with other vines, above all to tame its too harsh tannins, but also to improve its naturally somewhat dull colour. We will then find it in the company of black Malvasia, Ciliegiolo, Trebbiano, Merlot, or to give it a little color, since as mentioned it has little, with Colorino, more Merlot, Cabernet, Syrah, Petit Verdot. In recent years, however, also given the improvement of the clones on the market, much richer in anthocyanins than the old ones, there are more and more pure Sangiovese, even outside of Montalcino.

After two years of restrictions, the 50th Edition of Expo Chianti Classico returns to its former glory with the producers in P.zza Matteotti, to have their wines tasted and to tell you their great enological stories.
As always, we at Fattoria Santo Stefano will also be present, at our stand it will be possible to taste our latest vintages, the Chianti Classico 2019 and 2020, the Riserva Il Drugo 2018 and the Gran Salezione 2018.
The Chianti Classico Expo will go live on Thursday 8 September with the ribbon cutting attended by the municipal administration of Greve in Chianti, the representatives of the Chianti Classico Consortium and the Chianti Municipalities. The inauguration is scheduled at 5 pm in Piazza Matteotti, accompanied by musical interventions by the folkloristic group “Gli Amici di Chianti” and the participation of the historical procession of Wine and the Contado di Rufina. The day will continue at 18.00 in the space of the “Encounters Garden” with the presentation of the book “The infinite road. Stories, routes, landscapes in the lands of Greve in Chianti "edited by the Rai journalist Marco Hagge and the photographs by Andrea Rontini.

• Rules of access to the event
You buy a glass at the cashier, with a wine guide which includes the card / ticket which entitles you to 7 tastings. These tastings can be consumed in any single stand or pavilion, ONLY under presentation and validation of the card (each of you will be provided with a manual validator).
The quantity of wine for each tasting will be indicated by a small line printed on the glass itself, which we advise you not to exceed. The Riserva, the Gran Selezione and the Vin Santo can be served after double obliteration.

Fattoria Santo Stefano already last year joined the association of producers Viticulturists of Greve in Chianti with the mission of protecting and promoting the entire territory of Greve, protecting the associated wineries, promoting sustainability through protection and enhancement. of the territory, the redevelopment of dystonic areas, the development of wine tourism and agricultural productions that favor biodiversity. To date, the association has 32 companies.

In order to promote and make its business known in an ever wider and more widespread way, the association has organized an event by invitation reserved for the press and selected guests scheduled for Thursday 1 September 2022 in Greve in Chianti (FI) which will be included as part of the cycle of initiatives "Waiting for the Expo", on the weekend preceding the fiftieth anniversary of the Chianti Classico Expo.

The day will begin at 17:00 with a masterclass for a small and selected number of guests, led by the great expert of Chianti Classico (and not only), Alessandro Masnaghetti, publisher of Enogea, with whom he has published numerous volumes on some of the most important Italian wine areas (Barolo MGA, Barbaresco MGA, just to name a few).

Masnaghetti is also about to present the Atlas of Chianti Classico: the first book in the world dedicated exclusively to the territory of the Black Rooster, its municipalities, its vineyards and its Additional Geographical Units (UGA).

The masterclass, organized at the historic Enoteca Falorni, will allow you to learn more about the peculiarities and differences of the vast territory of the Municipality of Greve in Chianti through the wines for tasting, each coming from a different area and company of the Greve Winemakers Association. among these our Chianti Classico 2019 Fattoria Santo Stefano.

Appointments are restarted to taste our wines at their best, after two years of cancellations and delays due to the pandemic, we are back to let sector operators (buyers, sommeliers, restaurateurs, etc.) taste our new vintages.

Organic for duty

When our father Mauro Bendinelli left us Fattoria Santo Stefano, he also transferred to us children a great responsibility: that of respecting, preserving and keeping our land and its fruits healthy.

We are organic! We therefore have an eye on the environment, the protection of resources and the maintenance of soil fertility but also the recycling of waste, and the maintenance of biodiversity. To do this we try to use agronomic practices that respect the environment, aimed at keeping the soil alive and rich in nutrients such as rotations, mechanical weeding, green manuring. For our vineyards and our olive groves we only use organic fertilizers of animal and vegetable origin (such as compost), mixed with other vegetable components such as algae.

In fact, we think that producing wine in a natural way is not a technique, but a way of approaching life with the awareness that the territory must not be used but must be lived.

This period of the year (February) is a very important time for us, we are in fact engaged in the pruning of our vines, we use a mixed system of Tuscan arch and spurred cordon.

We use the spurred cordon in the Lago, Chiesa, Querceto, Frutteto and Sobole vineyards.It is a type of training that requires more time to set up, as it is necessary to form a robust and long permanent structure. In practice, the cord is the extension of the stump of the vine, which is placed on the supporting wire in a horizontal line and on whose back the spurs are inserted. Its height from the ground is usually 90-100 cm. The grapes produced by this type of farming are used for the production of our most important wines such as the Riserva il Drugo and the Gran Selezione.

In our vineyards we also use the Tuscan arch or overturned, a training system similar to the Guyot from which it differs in the arched curvature of the shoots, which can be more or less pronounced. We use this pruning in the vineyards called Fonte, Pino and Cantina, this allows us to identify three phases or cuts: past, present and future. These are conventional definitions to describe what was left on the plant in the past year; the one on which the present pruning will have to be carried out and the one that will be left on the plant for the future.

The party for our 60 harvests

Saturday 23 October 2021 at our company we celebrated sixty years of activity with a vertical in the barrel room, a tasting of old vintages – Chianti Classico 2006, 2007, 2008, 2010, 2014 (Magnum, Chianti Classico Riserva il Drugo), 2016 , 2017, 2018 – and a lunch with the dishes of chef Matteo Caccavo of Osteria Il Pratellino. Eight vintages in the presence of professionals including sommeliers, journalists and bloggers from the sector.

The event was introduced and presented by Leonardo Romanelli, a well-known gastronome, journalist and sommelier, and Giampaolo Chiettini, an oenologist who has been involved in the Santo Stefano company for years.

“Santo Stefano is a family business that is located in a land that has an important history, – says Giampaolo Chiettini – in 1716, the year in which Cosimo III determined the boundaries of Chianti, it was said that in this area there were wines that ‘could navigate’, that is, also suitable for export because they would not have wasted; here there is fabric, there is character, they are wines to drink. Our greatest work is in the vineyard during the harvest, only the best grapes will be vinified for our labels, and in difficult years, such as 2014, we always manage to find the vineyard that best responds to adversity “.

Many journalists and bloggers attended the tasting, including the AIS delegate for Tuscany Massimo Castellani, who focused particularly on the stylistic choices of the wines.

“For me it was very important to visit the vineyards and understand what the lands and the processes are done, – says Castellani – the solution found for the Il Drugo 2014 reserve was a winner, only the Sobole vineyard, which I was able to visit , could give the best grapes to make this wine. The oenological capacity of the company made it possible to identify the pearl that could allow it, and which somehow overcomes the stereotypes born of this vintage in Chianti. “

In addition to this, we have also focused on direct sales and on agritourism, but also on exports, in particular with America and Germany. “

The menu of Osteria Il Pratellino is much appreciated, served in the splendid farmhouse barrel room and composed of an exquisite sauce of local organic lentils, seasonal cabbage and broccoli and fried bread wafer as an appetizer while, as first courses, those present were able to taste Tuscan red onion carabaccia with ricotta and onion ravioli au gratin with Gran Mugello and a pumpkin and Cinta Senese sausage risotto with goat cream and almonds. As a second course, the Cinta Senese pork loin with rustic carrot puree with ginger was served and, finally, a must of traditional Tuscan cuisine, that is, a delicious English soup with Alkermes from Florence.

Our family’s greatest commitment is to keep the peculiarities of this historic village intact in the Chianti hills, respecting biodiversity and the perfect balance between nature and technology.
