Let’s look at the best wine to pair with cherries

May is the month of the cherry and in this article we’d like to give you some traditional Tuscan cooking tips. There are many culinary combinations for this marvellous fruit, but it’s not always easy, seeing as cherries have a sweet yet slightly acidic taste. Today we suggest what we think the best wine is to pair with cherries; that is, the Drugo!

With their bright red colour and bittersweet taste, cherries are a delicious source of Vitamins C and A, folic acid, magnesium and potassium. They are depurative and diuretic fruits, they can help ward off skin ageing and can be enjoyed by all ages. It’s definitely true that they’re addictive and they’re the best fruit of this season. So, as May is the month of the cherry, why not try pairing the Drugo with them?

The name of Drugo wine comes from the Tuscan term, used to indicate a strong, courageous but solitary man. This wine is exactly so, perfect to accompany our cherry-based dishes. These characteristics can be seen from its intense ruby red (and at times purple) colour, as well as its flavour which hints at a bushy vanilla bouquet.

The Drugo is a Chianti Classico Riserva DOCG, made with accurately selected Sangiovese grapes, which make up 90% of the wine, along with Cabernet- Sauvignon and Merlot for the remaining 10%. It is an exceptionally fine wine, made from only two hectares of vineyard. It is at its best when left to age for six months in a 600l durmast oak vat and then in French oak barrels, where the Drugo is kept for 24 months before being bottled. Polpettone (meatloaf) with cherry sauce

This month, we have a fantastically original savoury recipe (with cherries) for you. What we’re talking about is polpettone (meatloaf) with cherry sauce, which you can accompany with a nice glass of Drugo, as it will really intensify the taste of this incredible fruit:

INGREDIENTS

  • 500 gr minced beef
  • 350 gr minced pork
  • 60 gr breadcrumbs
  • 50 ml milk
  • 3 eggs
  • 1 chopped onion
  • 1 tablespoon grated Parmigiano (optional)
  • a few leaves of parsley
  • salt to taste

Ingredients for the cherry sauce

  • 100 ml raspberry vinegar
  • 120 gr sugar
  • 100 gr chopped onion
  • 210 gr fresh pitted cherries

Let’s get our polpettone with cherry sauce going!

1. In a large bowl, mix the minced meats with the eggs, breadcrumbs, salt, parsley, milk and add the grated Parmigiano to taste.
2. Combine the mixture with your hands, until it is compact. Once it’s ready, put it in a loaf pan and cook it at 180° for around 40 minutes.
3. Take it out of the oven and let it cool.
4. Next make the cherry sauce, heating the raspberry vinegar and sugar in a pan, as well as the onion, which you should cook beforehand with a bit of extra virgin olive oil.
5. After about 10 minutes, add the pitted and halved cherries with three tablespoons of water. Cook on medium/low heat until the sauce thickens.
6. Cut the polpettone into slices and pour the warm cherry sauce on top before serving.
