Gran Selezione

Chianti Classico D.O.C.G. Gran Selezione is a blend of 90% Sangiovese from the Sobole vineyard and 10% Cabernet Sauvignon. Its red fruit flavours, with hints of raspberry, meet the gentle aroma of wild lily flowers, making it a fine and elegant wine with a pleasantly alcoholic structure. The carefully chosen grapes are left to ferment in stainless steel vats and then transferred to French oak barrels for 30 months until bottling.

Drugo Riserva

Coming from a selection of Sangiovese grapes from a small vineyard located on a hilltop called Querceto. The south-west facing and fertile soil allow a perfect ripening of the Sangiovese grapes. In October, the best grapes are selected, picked by hand and put in baskets; later, the wine must is put in traditional cement or steel tanks at a controlled temperature. Then, the Drugo is moved into bigger barrels made of medium toast French oak, of 2500 litres and 1000 litres where it is refined for 24 months until bottling. The name Drugo, still used in this area of the countryside today, refers to a strong, very brave and talented man (a knight errant); hence the character and unforgettable personality of this wine.

Chianti Classico DOCG

Chianti Classico D.O.C.G. it is our wine produced from 100% Sangiovese grapes, harvested by hand in the month of October. The alcoholic fermentation takes place in large cement tanks with a 100 hl vitrified interior. where it remains for about 12 months until it passes into oak barrels of 2,500 and 1,000 liters for refining before being bottled. Average annual production 10,000 bottles of 75 cl. With a fruity and soft dry taste, with a good acidity typical of the vine and a reasonable 13,50% vol alcohol content, it goes well with any kind of Italian dish.

Rosato

Rosé from our lands, it has a limpid, powerful, intense cherry color. The vinification takes place with the bloodletting technique.
A fresh wine of Sangiovese grapes removed from the skin after pressing and fermented in white; pleasantly alcoholic, lively, easy to combine and suitable for hot summer occasions. It is served at 18 ° C and has a beautiful clear and bright pink color.
It differs from classic rosés for structure and alcohol content (13%). The idea of ​​rosé in fact comes from the need to satisfy the customers of the farm in the summer with a wine that is fresh and thirst-quenching and at the same time full-bodied and alcoholic. Pairings: excellent as a summer aperitif with dishes based on fish and shellfish, tomatoes and fresh cheeses, such as ricotta and mozzarella. Also perfect with Tuscan ham and melon.

Bianco Toscano IGT

Bianco Toscano, typical geographical indication, vinification in stainless steel. The pleasure of drinking a good white wine even in the land of Chianti thanks to Trebbiano grapes skilfully combined with aromatic and fruity grapes such as Malvasia, Sauvignon Blanc or Chardonnay. Our white has a dry and pleasant taste.

Vinsanto

Vin Santo (or Vinsanto) is a type of dessert wine. This traditional Tuscan wine is a sweet wine from Malvasìa and Trebbiano grapes. It is accompanied by cantucci, typical Tuscan biscuits. The harvest takes place at the end of September or October. We select the best bunches, then we proceed with the drying and the bunches are hung from the ceiling and left at a cool temperature for about 3 months. In December before Christmas, hence the name Vin Santo, it is vinified by pressing the grapes and then the must is placed into casks made of chestnut wood or cypress wood called “Caratelli”, and sealed. The Vinsanto rests for at least 5 years, normally in a well aired room, where it is subject to continuous temperature changes that favour the formation of the typical aromas and flavours of the sweet Vin Santo, thanks to its natural sugar content.

Grappa

Chianti Classico Grappa is produced by the distillation of the pomace of Chianti Classico and it is among the typical Tuscan products offered by Fattoria Santo Stefano. Our Grappa is a pomace brandy obtained from grapes produced, vinified and distilled exclusively in Italy.
