Vinsanto
In september the best grapes of malvasia and trebbiano were picked by hands and selected t to dry up in a speical room under the roof; 3 months later, before Christmas time were pressing the dried berries , the wine racks into “caratello” (barrels of chestnut or cypress wooden for 100 liters) with cement bung; here the wine stay for a period of minimum 3 years in a place where the alterations of the seasons allow for the evolution of taste and scents and flavours typically of the “vinsanto”. Balancing sweet and dry is a liquor and served as a dessert wine at the end of the dinner.
